Note: There are many ways to achieve the same highlight and shadow bevel effect from outlined text. Others include Pathfinder/Trim and Pathfinder/Knockout Back. The method in the video is kind of a clunky way to do it but I just keep doing it out of habit. Whatever works for you is fine, experiment and have fun.
